Success

Today I:
Started my day at 7:45
Had protien in my breakfast
Attended Math class
Walked to the library (despite being uber sore from yesterday's C25K and abs) and completed 2 homework assignments, a Quiz (100% baby!!), and a prarice test (also 100%!)
Attended Meteorology class
Made a new fabulous version of pho and inhaled it
Completed 30 min of yoga
Completed 30 of Blogilates 
Completed an enema (Shawna, try to keep it together ;-) )
Used this stuff. Its awesome!
Gave myself a mini pedicure, no new polish but everything else
Meditated for 10 min
Netti'd (I know thats not a word, you get it)
Feeling awesomesauce!




Pho for Lazy People



One of my favorite recipes takes about 45 minutes to make if you do it per the directions. When I got out of class today I was starving and couldn't wait that long. So I thought to myself, "how do I develop the same flavors in a shorter amount of time?" Then it hit me! The other day at the store I picked up a Thai ginger broth made by Swanson's. I thought why not add a little bit of that to my vegetable broth and see if it gives me the same yummy ginger flavor that my 30 minute broth usually has. It was a total success (not that you could tell by the empty bowl pictured above mind you)! I will do this three version from now on more likely as it only took about 10 minutes! Here's what I did:

Serves one

Ingredients
1 1/4 cup vegetable broth preferably low-sodium
1/4 cup Swanson's thai ginger broth
1/2 small can of mushrooms stems and pieces, drained
Pat of butter
Four or five years of baby corn, quartered
Tablespoon of hoisin sauce
Teaspoon of sesame oil
One serving of rice noodles, dry
For garnish: bean sprouts, chili oil, and lime juice to taste

Directions
Get your broth boiling and a pot
And a pan sauté butter, mushrooms, baby corn, hoisin, and sesame oil on medium high heat for about 10 minutes. All of these items are already cooked, so you're really just feeding them through.
By the end of the 10 minutes your broth should have been boiling for several minutes.
Take broth off the heat and submerge your rice noodles. 
Once the rice noodles are tender transfer broth and noodles to a deep bowl. Top with your mushrooms, corn and choices of garnish.

Real Girls Eat

So I have joined a new year challenge from the Nuriahing Minimalism blog to assist me and cleaning out clutter and unnecessary items from my life. The first thing on my list was some clothing. Either things that I didn't wear anymore or things that I still had left over from my consignment shop (some items are on PoshMark! Go take a peek at my closet!). I'm tackling the next item on my list today, which are my books. In going through my books to list and sell on Amazon I came across this one pictured above. "Real Girls Eat" by Athena Paul as part of her girlosophy project. When I pillied it out of the box I was reminded of when and why I bought this book and have decided I cannot part with it. It was my first effort at taking control of my eating disorder many years ago after asking my father for help. It opened my eyes to real, whole, clean foods for the first time and taught me that it's possible to enjoy food. I wanted to share it with anybody who is willing to read this because it made such an impact in my life. 

This new year challenge has brought me a lot of warm and fuzzy feelings! How was your New Year's resolution going?

Radicchio Mushroom Pizza



I came across a recipe in "The Kind Diet" by Alicia Silverstone that booked pretty tasty so I decided to try it. However, I guess Brett has been wearing off on me and as I was making it I decided to alter the recipe! Here is my version:

Ingredients:
Pillsberry Pizza Crust
One head of Radicchio
2 tablespoons Olive Oil
Fresh cracked black pepper to taste
Lawery's Garlic Salt to taste
One small can of sliced mushroom pieces and stems, drained 
A fourth of a block of Romano cheese

Directions:
Pre-bake pizza crossed her packaging directions.
Cut radicchio into ribbons.
Shred Romano cheese.
In a bowl combine cheese, ribbons of radicchio, olive oil, garlic salt, black pepper, and mushrooms, toss to mix well.
Once the crust has pre-baked, top with mixture and place back in the oven as pizza crust packaging directs.

Is there enough time?

Anyone who knows me knows that I'm always on the quest to find the perfect routine. The best way for me to spend each day to ensure my life is full of happiness, that I am healthy, and that I am productive!
This quest has led me to a lot of research on many different topics. Recently I have been evaluating my goals and thanks to Kimberly Wilson's 52 Weeks of Tranquility, I have been reassessing whether or not I have too many goals to successfully achieve. I mean, is it realistic to try to have everday be like this?

Rise with the sun
Complete 30 to 90 minutes of yoga followed by meditation
Perform an enema for at least 15 minutes
Oil pull with coconut oil for at least 15 minutes while dry brushing
Shower to include washing and conditioning hair, washing/exfoliating face, washing/exfoliating body, shaving, and exfoliating feet
Apply damage control and smoothing serum to wet hair
Complete face routine including tweezing as needed, moisturizing, and no less than seven pieces of make up
Hair routine including blow drying, straightening, and damage control
Drink 8 ounces of warm water with the juice from half lemon and a pinch of cayenne pepper
Set my intentions for the day
Make a fresh green juice as my first of six small whole food meals
Work/study/homework/attend classes
Make sure to drink at least a gallon of water throughout the day
Complete at least 30 minutes of strength training each day and a 30 minute run three days per week
Prep my food for the following day
Work with Opal for 15 minutes a day
Complete my p.m. routine to include a second shower, a rotation of manicure and pedicure as needed, make up removal, moisturizing, and using my Netti pot
Spend quality time with family
Complete daily chores to include making a bed, cleaning the kitchen, tidying, and a rotation of cleaning the floors, the windows, etc. as needed
Complete a creative project each week
Read for pleasure for at least 30 minutes a day
Have an hour of relaxation each day
In bed no later than 11

I am open for suggestions if anybody knows how I can make this happen!

Completed all of my homework for the week for my Technology for Educators and Math classes
Attended Meteorology class from 2 to 330
Spent over an hour on the phone trying to fix a problem with my iMessages (problem solved!)
Enjoyed 30 minutes of yoga
Made radicchio pizza from Alicia Silverstone's "The Kind Diet" recipe book(gifted to me by my dear friend Terri) for dinner
Had lots of snuggles with the puppies
Finally had it signed the TV down time

Feeling energetic 😄

Enjoyed a Tropical Green Tea with fresh lemon juice from my Dad's garden, and honey from a local bee keeper

Completed a Sun Salutation
Read and cleaned up my Feedly blogs
Checked my emails
Clipped, organized, and pulled expired coupons
Listened to some awesome podcasts

Completed an hour and a half of Blogilates

Stayed under my calorie goal
Did two loads of laundry
Restored my phone to factory settings
Updated my phone's software
Cleaned up my phone's apps
Spent some time with Mom watching The Taste

Feeling accomplished 😊
